Danny started baking hot cross buns in the late eighties, the way his mum used to in Bateman's Bay. Spice mix scribbled on a Tally Ho packet, cross piped on with a steady hand, the whole tray glazed straight out of the oven so the shine never sets.
In 2021 the RiotACT named them the best in Canberra. The queue around the block at Easter has not been quiet since.
Pre-order for EasterDanny Collins learned bread in Bateman's Bay in the 1960s, opened the Narrabundah shop in the late eighties, and never moved off Iluka Street. He still proves the dough most mornings.
His sons Russell and Jesse run the bench beside him. His daughter Katie handles the counter and the wholesale orders. His grandsons Justin and Travis are the third generation in the apron. Six days a week, four o'clock start, same recipe.
